Funny lemon mouse

Ingredients:

  • 6 leaves white Gelatine
  • 200 g sugar
  • 4 eggs
  • juice of 4 lemons
  • 1 lemon peel
  • 2 nuts and 3 pistachios

Preparation:

Put 1/4 liter cold water into a measuring cup. Lay the gelatine leaves in the water to soak for 4 minutes and just say: "Abrakadabra, gelatine swell and get soft!" Break the egg and carefully separate the yolk from the white. Then add one teaspoon sugar to the egg white and beat it for about 5 minutes with a whisk until it turns into a very firm snow. Then put the egg snow into the refrigerator. Put the rest of the sugar into the egg yolk and stir it with the whisk until the mixture is foamy. Then heat 4 teaspoons of lemon juice in a small pot. Gently press the water out of the gelatine and place it in the pot with the lemon juice. Now say:"Hokuspokus Filibus, gelatine dissolve!" and stir it until the gelatine has dissolved. Then mix 1 teaspoon each of the remaining lemon juice, the egg mixture (egg yolk and sugar) and the lemon gelatine and stir them together. Repeat this step (always only 1 teaspoon of each ingridient) until all ingridients are used up and place the cream in the refrigerator until it is thick.

Then remove it from the refrigerator and fold in the egg snow (egg white with sugar). Line a mouse mould with transparent film, say: "black cat, black cat, black cat, gelatine run into the mould!" and fill it with lemon creme. Then say: "Mutaboris, gelatine gel!" and put the mould into the refrigerator for 4 hours until the creme becomes firm. Place a large, flat plate on top of the mould, say: "Simsalabim, gelatine stand on your head!", and turn the mouse mould and plate together upside down so the lemon mouse will lie on top of the plate. Take away the mould and carefully remove the film. Cut a little tail, ears, and mouth out of lemon peel. Use nuts, nut pieces, pistachios, currants, smarties, chocolate chips, cut chocolate pieces, or other nice bits for the eyes and nose.

The lemon mouse is ready!
